Plant secondary metabolites (phenolics; natural phytochemical) remain the main focus of my program. The goal of our contributions is to improve healthfulness and marketability of products consumed by the general public.

Research

Thoroughly identifying the quality components of a food is key to discerning how cultivar selection, environment, post-harvest conditions, processing methods, etc. ultimately influence food. We concentrate on grapes and wines, but include other fascinating foodstuffs that are loaded with plant phytonutrients like black rasberries, strawberries, cranberries, elderberries, lingonberries, yellow/red/purple potatoes, basil, etc.
