Thoroughly identifying the quality components of a food is key to discerning how cultivar selection, environment, post-harvest conditions, processing methods, etc. ultimately influence food. We concentrate on grapes and wines, but include other fascinating foodstuffs that are loaded with plant phytonutrients like black raspberries, strawberries, cranberries, elderberries, lingonberries, yellow/red/purple potatoes, basil, etc.
